Article Synopsis
  • * The review highlights that the Maillard reaction plays a key role in acrylamide formation, with suppression of this reaction yielding the most significant reduction effects, often over 90% in some studies.
  • * Antioxidants have also shown effectiveness in reducing acrylamide levels by 50-90%, with tropical fruits and bamboo leaves proving to be particularly beneficial in biscuit formulations.

In the present study, 18 polychlorinated biphenyl (PCB) compounds were measured in marine sediments collected from 49 offshore stations in the Persian Gulf and the Gulf of Oman in 2019. After the last oceanographic cruise in 2006, no study has been performed on the offshore sediments of this region, and this is the first study on the PCBs in this area. The total amount of PCB compounds in the sediment samples ranged from 74.

A quantitative method based on quick, easy, cheap, effective, rugged, and safe technique (QuEChERS) sample extraction and ultra-performance liquid chromatography/tandem mass spectrometry (UHPLC-MS/MS) was evolved for the determination of 47 pesticide residues in fresh Mazafati date fruits from Bam City of Kerman Province, Iran. The recoveries for selected pesticides ranged from 88 to 110% with a relative standard deviation (RSD) of less than 20% at concentrations of 0.05 and 0.

End-stage of liver fibrosis as a precancerous state could lead to cirrhosis and hepatocellular carcinoma which liver transplantation is the only effective treatment. Previous studies have indicated that farnesoid X receptor (FXR) agonists, such as obeticholic acid (OCA) protect against hepatic injuries. However, free OCA administration results in side effects in clinical trials that could be alleviated by applying bio carriers such as MSC-derived exosomes (Exo) with the potential to mimic the biological regenerative effect of their parent cells, as proposed in this study.

The use of pesticides plays an essential role in improving crop quality and yield, however, it causes air, water, and soil pollution and the residue of these pesticides in agricultural products threatens the ecosystem and human life. Therefore, it is highly desirable to develop rapid, simple, and cost-effective methods for regular monitoring of pesticide residues in agricultural products especially strawberry that is consumed fresh and unpeeled. In this study, gold nanoparticles (AuNPs) of varying sizes have been exploited as sensing units to design a non-enzymatic colorimetric sensor array for the detection and discrimination of various pesticides including; bifenazate (BF), paraquat (PQ), diazinon (DZ), thiometon (TM), and carbendazim (CD) and chlorpyrifos (CP).

The chronic dietary risk assessment for 34 pesticides suspected of acting as endocrine disrupters in Iran was assessed by comparing TMDI with the Acceptable Daily Intakes (ADI). Of 34 investigated endocrine-disrupting pesticides (EDPs), 6 had TMDI > ADI. In addition, potential non-carcinogenic and carcinogenic health risk assessments were evaluated using Monte Carlo simulation.

Detection of pesticide residues in soil samples was conducted using UHPLC-MS/MS. Non-dietary health risk assessment was conducted using calculate chronic daily intake (CDI) from ingestion, inhalation and dermal contact pathways and following non-carcinogenic and carcinogenic risks in the adults and adolescent. The rank order of pesticide in soil based on their concentration was malathion (0.

In this research, walnut shell along with a Ni-metal organic framework (Ni-MOF) was thermally treated to obtain a highly efficient biochar. A µ-solid phase extraction (µ-SPE) setup containing the optimized walnut modified biochar was implemented for the extraction of 20 wheat specified pesticides with a wide range of polarities. The modified biochars were characterized and the role of Ni-MOF on the porosity of the obtained biochars was investigated.

Contamination of food with mycotoxins can pose harmful effects on the health of consumers in the long term. Coffee contamination with mycotoxins has become a global concern. This study attempted to meta-analyze the concentration and prevalence of ochratoxin A (OTA) in coffee products and estimate consumers' health risks.

Acrylamide, a food-borne chemical toxicant, has raised global concern in recent decades. It mainly originated from reducing sugar and free amino acid interactions in the carbohydrate-rich foodstuffs heated at high temperatures. Due to the neurotoxicity and carcinogenicity of AA, the mechanism of formation, toxic effects on health, and mitigation strategies, including conventional approaches and innovative technologies, have been of great interest since its discovery in food.

Due to the widespread use and environmental pollution of estrogenic chemicals, the need for screening tests to detect these compounds is felt more than ever. These compounds lead to cell proliferation. Therefore, studies used cell proliferation to evaluate estrogenic compounds was studied in this systematic review.

Following the EPA recommended method, a chronic diet risk assessment for pesticides was recently performed for adults and children in the Iranian population. The National Theoretical Maximum Daily Intake (NTMDI) for 32 pesticides was computed using the theoretical maximum residue limits (MRLs) of food consumption regulations and data from the comprehensive database of the Iranian Research Institute of Plant Protection (IRIPP). The risk was assessed by comparing TMDI with the acceptable daily intakes (ADI) evaluated by FAO.

Fish as a critical food source is responsible for supplying nearly 20% of the average per capita animal protein for 3.2 billion people worldwide. However, oral exposure to potentially toxic elements (PTE) such as mercury (Hg), cadmium (Cd), lead (Pb), and arsenic (As) through marine fish consumption can cause health risks in consumers.

Aqueous Extract of root (AE) exhibited remarkable foaming profile, emulsification properties and antifungal activity due to the presence of high concentration of total saponins. Total phenolic compounds, another main component, accounted for the AE antioxidant activity. Spray drying of AE, as a thermal process, did not affect the foaming indices of Spray-dried Extract (SE) and is a recommended alternate for convenient application in food industry.

In this study, 30 pesticide residues in 45 fresh-eating cucumber, tomato, and okra fruit samples collected from the Khuzestan province as the main agricultural products in Iran using the QuEChERS extraction method were analyzed. In addition, noncarcinogen and carcinogen health risk assessments were evaluated. Results indicated that 93% of cucumber samples had at least one pesticide, of course, less than the maximum residue limit (MRL).

Raw, pasteurized, powdered cow milk and human milk samples from Tehran, Iran were investigated for the residual of fifty pesticides with the aid of gas chromatography coupled with electron capture detector (GC-ECD) and mass detector for confirmation; and ultra-high performance liquid chromatography-tandem mass spectroscopy (UHPLC-MS/MS). No pesticide residue was determined in more than 91% of examined samples. However, the dimethoate residue was detected in 3 raw milk samples in levels higher than EU recommended MRL.

In this work, a colorimetric sensor array has been designed for the identification and discrimination of thiometon (TM) and phosalone (PS) as organophosphate pesticides and prothioconazole (PC) as a triazole pesticide. For this purpose, two different plasmonic nanoparticles including unmodified gold nanoparticles (AuNPs) and unmodified silver nanoparticles (AgNPs) were used as sensing elements. The principle of the proposed strategy relied on the aggregation AuNPs and AgNPs through the cross-reactive interaction between the target pesticides and plasmonic nanoparticles.
