Unlabelled: Since December 2009, chest physicians and allergologists in Burgundy have been able to call upon a medical indoor environment counsellor (MIEC). The consultations are free for the patient and are undertaken following a medical referal after systematic cutaneous prick tests.

Aims: To describe the indications, the distribution of prescriptions and to measure the impact of the counsellor's visits on the first 100 patients at 6 months and on the physicians at 18 months.

A novel procedure was developed to intercalate enzymes into dispersed phyllosilicates that were cross-linked with silicate polymers formed by the hydrolysis of tetramethyl orthosilicate (TMOS). Lipoxygenase (LOX) intercalated into cross-linked phyllosilicates exhibited high enzymatic activity. The enzyme-phyllosilicate composite prepared by this procedure had an improved pore network.

Sophorolipids (SLs) were synthesized by fed-batch fermentation of Candida bombicola on glucose and either palmitic acid (SL-p), stearic acid (SL-s), oleic acid (SL-o) or linoleic acid (SL-l) and the structural distribution accurately determined by atmospheric pressure chemical ionization-mass spectrometry (APCI-MS). The surfactant properties, including critical micelle concentration (CMC), minimum surface tension (min.ST) and oil-water interfacial tension (IFT) were measured by tensiometry.

Incorporation of stearic acid into canola oil to produce trans-free structured lipid (SL) as a healthy alternative to partially hydrogenated fats for margarine formulation was investigated. Response surface methodology was used to study the effects of lipozyme RM IM from Rhizomucor miehei and Candida rugosa lipase isoform 1 (LIP1) and two acyl donors, stearic acid and ethyl stearate, on the incorporation. Lipozyme RM IM and ethyl stearate gave the best result.
