In this study, we optimized the composition of the browning inhibitor for apples and established a prediction model for the browning inhibitor concentration in mass-processed fresh-cut apples based on electrical conductivity measurements. The "Fuji" apples that were harvested in Chungju, Korea, were used for this study. Vitamin C mixture (VCM) and trehalose (Tre) were used as browning inhibitors at a 4% ratio.

We studied the cost effective direct laser patterning of copper (Cu) on thin polyimide substrates (PI thickness: 12.5-50 µm) using a 405 nm laser module attached to an inexpensive 3D printer. The focal length of the laser was intentionally controlled to reduce defects on patterned Cu and surface damage of PI under predetermined process conditions.

A simplified fabrication method for an optical pickup unit (OPU)-based Raman probe was introduced. The use of OPU tracking mode was examined to increase the Raman signal and reduce background signals. Unlike most Raman systems, the tracking mode of the OPU moves the objective lens in the x (or y) direction, thus resulting in a significantly reduced background signal and increased Raman signal intensity.

Ionogels are good candidates for flexible electronics owing to their excellent mechanical and electrical properties, including stretchability, high conductivity, and stability. In this study, conducting ionogels comprising a double network (DN) of poly(N-isopropylacrylamide-co-N,N'-diethylacrylamide)/chitosan which are further reinforced by the ionic and covalent crosslinking of the chitosan network by tripolyphosphate and glutaraldehyde, respectively, are prepared. Based on their excellent mechanical properties and high conductivity, the developed DN ionogels are envisioned as stretchable ionic conductors for extremely stretchable alternating-current electroluminescent (ACEL) devices.

This study presents a meta-analysis of studies that investigate the effectiveness of chitosan administration on lifestyle-related disease in murine models. A total of 34 published studies were used to evaluate the effect of chitosan supplementation. The effect sizes for various items after chitosan administration were evaluated using the standardized mean difference.

Although Raman spectroscopy is a major analytical tool in modern chemical experiments, commercial Raman spectrometers remain very pricey for educational and research purposes in individual university laboratories. Thus, this study focused on the structural similarity between the Raman spectrometer and an optical pickup unit (OPU), which is an inexpensive compact optical device used for a part of optical discs. The study investigated whether or not a full set of Raman spectrometer can be developed at a cost of less than 1,000 US$.

We investigated the effect of probiotic supplementation on inflammatory bowel disease (IBD) by meta-analysis. We included 30 studies to assess the effect of probiotic administration. We estimated the effect size using standardized mean difference, and we evaluated the statistical heterogeneity of the effect size using Cochran's Q test, followed by meta-ANOVA and meta-regression analysis to explain the heterogeneity of the effect size using a mixed-effects model.

This study aimed to extend the retention of flavor in coffee-containing milk beverage by microencapsulation. The core material was caramel flavor, and the primary and secondary coating materials were medium-chain triglyceride and maltodextrin, respectively. Polyglycerol polyricinoleate was used as the primary emulsifier, and the secondary emulsifier was polyoxyethylene sorbitan monolaurate.

Article Synopsis
  • Researchers prepared and analyzed N-substituted phosphors LiMSiO:Eu (with M being Ca, Sr, and Ba), finding varying levels of nitrogen content—0.003 for Ca, 0.009 for Sr, and 0.032 for Ba—using secondary-ion mass spectroscopy and confirmed these findings through infrared and X-ray photoelectron spectroscopies.
  • Photoluminescence studies indicated that the emission intensity of the phosphors improved with nitrogen doping, with emission wavelengths shifting in the order of Ca < Ba < Sr, which contrasts with expected trends based on crystal field splitting and was explained by electron-electron repulsions in the host lattice.
  • Structural strain measurements using the Williamson-Hall

In this paper, we report the physicochemical and sensory properties of milk supplemented with a powder of microencapsulated lactase. The core material was lactase (β-galactosidase), the primary coating material was medium-chain triglyceride (MCT), and the secondary (enteric) coating material was either hydroxypropyl methylcellulose phthalate (HPMCP) or shellac, comparing both against market milk as a control. The physicochemical properties of both types of microcapsules were analyzed, including the particle size, zeta potential, and in vitro release behavior.

Reduced graphene oxide (RGO)-coated microballs of poly (methyl methacrylate) (PMMA) used for fabricating three-dimensional sensor (3D sensor), which are expected to exhibit high sensitivity compared with conventional two-dimensional (2D) sensors, were prepared using a reaction-based assembly process. The sheet resistance and transmittance of the RGO-coated balls decreased with increasing number of coatings, implying that the RGO was well adhered to the ball by the assembly method. Two types of vacuum pressure sensors using multiple balls and a single ball were fabricated using lift-off and air-blowing methods, respectively.

This study was conducted to compare the anti-allergic effects of a whey protein concentrate (WPC) and WPC hydrolysate. WPC hydrolysate was prepared using enzymatic digestion for 8 h with trypsin and α-chymotrypsin, after which it was freeze-dried. The allergic parameters assessed in rat basophilic leukemia (RBL)-2H3 cells were degranulation and release of β-hexosaminidase, release of tumor necrosis factor (TNF)-α, and changes in the expression of IL-1β, IL-4, and IL-10 by real time polymerase chain reaction (PCR).

Article Synopsis
  • Researchers successfully separated different graphene nanoribbon (GNR) samples from a mixture using traditional methods and observed variations in sheet resistance depending on temperature and pressure conditions.
  • Experiments showed that sheet resistance decreased with lower pressure at 30 °C and increased at 100 °C, which was explained by the attractive interactions between GNR sheets and confirmed through shifts in X-ray diffraction peaks.
  • The GNR sensors demonstrated rapid response times to pressure changes, outperforming reduced graphene oxide (RGO) sensors in sensitivity and being capable of detecting extremely low vacuum pressures.

We report a new method for measuring vacuum pressures using Van der Waals (VDW) interactions between reduced graphene oxide (RGO) sheets. For this purpose, we utilized a reaction-based self-assembly process to fabricate various intercalated RGO (i-RGO) films, and monitored their electrical behavior with changing pressure and temperature. Pumping to remove gas from a vacuum chamber produced a decrease in the sheet resistance of i-RGO.

A new self-assembly concept is introduced to form large and pristine films (15 cm in diameter) of reduced graphene oxide (RGO). The resulting film has different degrees of polarity on its two different sides due to the characteristic nature of the self-assembly process. The RGO film can be easily transferred from a glass substrate onto water and a polymer substrate after injection of water molecules between the RGO film and glass substrate using an electric steamer.
