This research endeavored to engineer robust delivery matrices for bioactives, specifically benzyl isothiocyanate (BITC), by harnessing the synergistic covalent and non-covalent interactions between fish skin gelatin (FSG) and proanthocyanidins (PC) to synthesize novel composite emulsions. The objective was to delineate the influence of these molecular interactions on the emulsion's structural integrity and stability, which are pivotal for the efficacious encapsulation and controlled release of BITC. Employing a suite of analytical techniques, including Fourier transform infrared spectroscopy (FTIR), fluorescence spectroscopy, and contact angle measurements, the study delineated the predominant molecular forces at play within the FSG-PC complex, identifying electrostatic and hydrophobic interactions as the cornerstones of this interaction.

Aqueous solution experiences either crystallization or vitrification as being cooled, yet the mechanism of this bifurcation is confused. Since the glass-transition temperature T is much lower than the melting temperature, we herein propose an entropy-driven glass-forming liquid (EDGFL) as an attractive concept to develop anti-freezing electrolytes. The T is delicately modulated via regulating local structural orders to avoid the energy-driven ice crystallization and enter an entropy-driven glass transition, which can be theoretically explained by the competitive effect between tetrahedral entropy of water and pair correlation entropy related to ions.

We demonstrate an endless optical domain polarization demultiplexing scheme that was realized in a 96 Gbaud-PS-16QAM coherent transmission system to alleviate the data processing pressure of the DSP in the receiver. It can be effectively employed in the 140 km fiber link (Metro DCI) and extended to the 2000 km optical fiber networks (Long haul DCI or backbone networks transmission).
