The recovery of bioactive compounds from waste and modification of their properties by encapsulation are the main challenges today. In this study, the ultrasound-assisted extraction of antioxidants from orange peels was optimized using a central composite design. Ethanol (50%, /) was the solvent of choice for their extraction.

The ethanol concentration (33-67%), extraction temperature (33-67 °C), and extraction time (17-33 min) were analyzed as the factors that impact the total phenolic content. The liquid-to-solid ratio of 10 cm g was the same during extractions.
