For braised pork belly, a popular traditional Chinese dish, we lack a scientific knowledge to reduce the formation of harmful heterocyclic amines (HAs) and advanced glycation end products (AGEs) while maintaining sensory quality. This study aimed to clarify the factors affecting the formation of free and protein-bound HAs and AGEs during the braised pork belly cooking process using UPLC-MS/MS analysis. The results indicated that soy sauce significantly promoted the formation of HAs, with organic soy sauce exhibiting the strongest promoting effect, increasing HAs by 270.

Prior reward is a potent cue for attentional capture, but the underlying neurobiology is largely unknown. In a novel whisker touch detection task, we show that mice flexibly shift attention between specific whiskers on a trial-by-trial timescale, guided by the recent history of stimulus-reward association. Two-photon calcium imaging and spike recordings revealed a robust neurobiological correlate of attention in the somatosensory cortex (S1), boosting sensory responses to the attended whisker in L2/3 and L5, but not L4.

In semiconductor heterojunction, polarity critically governs the physical properties, with an impact on electronic or optoelectronic devices through the presence of pyroelectric and piezoelectric fields at the active heteropolar interface. In the present work, the abrupt O-polar ZnO/Ga-polar GaN heterointerface was successfully achieved by using high O/Zn ratio flux during the ZnO nucleation growth. Atomic-resolution high-angle annular dark-field and bright-field transmission electron microscopy observation revealed that this polarity inversion confines within one monolayer by forming the (0001) plane inversion domain boundary (IDB) at the ZnO/GaN heterointerface.
