Tocopherols, secoiridoids and capsaicinoids by HPLC-DAD, volatile compounds by HS-SPME-GC-MS, and sensory profiles were studied. The decrease in tocopherols and secoiridoids was greater in "infusion" samples, while a significant increase in capsaicinoids was observed in "permanent infusion" samples.
