Application of enzyme-digested soy protein hydrolysate on hydroponic-planted lettuce: Effects on phytochemical contents, biochemical profiles and physical properties.

Plant-derived protein hydrolysates (PH) offer many promising benefits and applications. In this paper, PH was prepared from soy-based processing waste via enzymatic-digestion method and supplemented into hydroponic grow medium solution. The hydroponic-planted lettuces were then harvested and assessed for their selected phytochemical contents, biochemical parameters, antioxidative enzymes and mineral contents.
