The ancient native variety of elephant garlic, known as "Aglione della Valdichiana" and cultivated in the Valdichiana area of Tuscany, Italy, has gained recent recognition in the National Catalog of Local Varieties. The renewed interest in traditional products has led to a focus on identifying local varieties of elephant garlic, driven by their distinctive organoleptic and nutritional characteristics. However, other types of elephant garlic nowadays available on the market appear similar, but challenges exist in discerning their origin and composition.

Monovarietal olive oils, known for their distinct aromatic profiles, face challenges in preserving their initial quality due to variations in stability and susceptibility to oxidative deterioration. This study focused on the storage stability of two Italian cultivars, 'Biancolilla' and 'Cerasuola', from Sicily, chosen for their aromatic complexity and divergent storage stability. Oils, whether filtered or unfiltered, underwent storage at two thermal regimes (18 °C and - 20 °C) over a year.

Red wine grapes are qualitatively evaluated for their content in polyphenols and anthocyanins. Due to certain conditions (weather, latitude, temperature), the concentration of these compounds may be not at the right level for reaching a high-quality wine, thus postharvest technologies can be operated as a remediation strategy. Ethanol is a secondary volatile metabolite and its application has been demonstrated to delay fruit ripening, to reduce decay, and to increase secondary metabolites.

The impact of malting on antioxidant, nutritional, and antinutritional features of two industrial hemp cultivars was investigated. The seeds were steeped (5 h; RT), germinated (3-days; 24 °C), and kilned at different temperatures (6 h; 50 °C or 70 °C). The following determinations were performed on malted and unmalted samples: total phenolic content, polyphenol profile, total antioxidant capacity, tocopherol composition, proximate analysis, fatty acids profile, trypsin inhibitors and phytate content.

This paper aims to investigate failures induced by vibrations on machines, focusing on agricultural ones. The research on literature has brought to light a considerable amount of data on the driven vehicles and not much on the operating machines, including the ones that we looked for. For this reason, it was decided to direct a survey with the people who work with agricultural machinery every day: operators, sub-contractors, and producers.
