Background: Fermented Rhus verniciflua Stokes extract (FRVE) reported an anti-hepatic lipidemic property mediated by the upregulation of AMP-activated protein kinase (AMPK) in cell and animal models. However, it remains unclear whether there is an effect of FRVE on liver disease-related parameters and serum lipid levels in humans. We investigated the effects of FRVE intake for 12 weeks on liver disease-related parameters and serum lipid profiles in Korean adults.

Long-term aging of , a traditional Korean liquor made of rice and (a fermentation agent), causes browning and odor and flavor development. This study investigated the effects of heat-treated (50-80 °C, 30 min) on quality. The saccharogenic powers and glucoamylase, α-amylase, and carboxypeptidase activities were similar in non-heat-treated and that treated at 50 °C.

Article Synopsis
  • Strains of Acetobacter sp. were isolated from traditional vinegar in Daegu and Gyeongbuk, with KJY8 identified as a high acetic acid producer.
  • KJY8 was characterized as Acetobacter pomorum through chemical and genetic analysis, showing a G+C content of 60.8 mol% and specific components like LL-diaminopimelic acid in its cell wall.
  • The optimal growth conditions for KJY8 to produce acetic acid were found to be at 20°C and pH 3.0, using an initial ethanol concentration of 9%, resulting in an acetic acid concentration of 8%.
