Article Synopsis
  • - A new strain of lactic acid bacteria, identified as Leuconostoc mesenteroides subsp. dextranicum (Strain 213M0), was found to produce a unique bacteriocin-like substance with strong antibacterial properties against certain Listeria species.
  • - The optimal temperature for producing this inhibitory substance (BLIS) was determined to be 25°C, with production occurring mainly during the exponential growth phase of the bacteria.
  • - BLIS 213M0 is highly stable across a broad pH range and can withstand heating at 121°C, indicating its potential as a novel listericidal bacteriocin that may differ from other known bacteriocins.
