Background: Transglutaminase (TGase) is a heat-resistant biocatalyst with strong catalytic activity, which functions effectively under moderate temperature and pH conditions, and is used widely in protein cross-linking and recombination. Transglutaminase cross-linking is a novel and specific modification method for black bean protein isolate (BBPI). This article investigates the effect of transglutaminase cross-linking on the structure and emulsification performance of heated BBPI.

Article Synopsis
  • Wheat bran was fermented using different types of bacteria to see how they change it and what good things they create.
  • Two of the bacteria quickly made lactic acid and increased healthy compounds, but one did not perform as well.
  • The study showed that each bacteria affected different nutrients, which could help us understand how they might be good for our health.

Soy proteins are seen as a promising alternative food source for meat with environmentally friendly properties. The problem is that the functional properties of soy proteins do not meet the needs of the food industry, and some existing modification technologies have adverse effects. Recently, cavitation jet technology (CJT) has been studied because it generates high heat, high pressure, strong shear and strong shock waves.

Rice protein is highly nutritious and easy to digest and absorb. Its hydrolyzed peptides have significant effects on lowering blood pressure and cholesterol. First, a detailed and comprehensive explanation of rice protein extraction methods was given, and it was found that the combination of enzymatic and physical methods could improve the extraction rate of rice protein, but it was only suitable for laboratory studies.

Carbon (C), nitrogen (N) and phosphorus (P) concentrations and stoichiometry play important roles in biogeochemical cycles of the ecosystems, yet it is still unclear how the allocations of C, N and P concentrations and stoichiometry among plant organs and soils related to O stress and straw return. Here, a pot experiment was conducted in open top chambers to monitor the response of C, N and P concentrations and stoichiometry of leaves, stems, roots and soils during a growing season (branching, flowering and podding stages) of soybean (Glycine max; a species highly sensitive to O) to background O concentration (44.8 ± 5.

A several of basic ionic liquids (ILs) were synthesized as green solvents and catalysts for the preparation of 1,8-naphthyridyl derivatives via the Friedlander reaction. [Bmmim][Im] exhibited remarkable catalytic activity to achieve the synthetic targets, and the reaction conditions were optimized. The model product 2,3-diphenyl-1,8-naphthyridine (1,8-Nap), with carboxyethylthiosuccinic acid (CETSA) to form an IL corrosion inhibitor ([1,8-Nap][CETSA]), and its corrosion inhibition performance for Q235 steel in 1 M HCl were researched by weight loss measurements, and the results showed that the inhibition efficiency was 96.

Background: An increasing number of patients become chronic critically ill (CCI) and dependent on long-term therapies in the intensive care unit (ICU). Mortality and healthcare costs increase in these patients. In order to deal with this problem, the magnitude and risk factors for CCI must first be determined.

This study reported the kinetics and mechanism of degradation of odorant haloanisoles by peracetic acid combined with UV irradiation (PAA/UV). The removal efficiency of haloanisoles by PAA/UV was more than 92 % after 1 h reaction at pH 5, 25 °C, [HAs] =50 μg/L and [PAA] = 10 mg/L. The degradation of haloanisoles was fitted by the first-order kinetic model, and the rate constants of various haloanisoles followed the order: 2,4,6-tribromoanisole (2,4,6-TBA, (9.

Chlorine-based compounds have been used as a disinfectant in drinking water treatment plants for decades because of their excellent sterilisation efficiency and low cost. However, the formation of disinfection by-products during chlorination is a cause for concern. Peracetic acid (PAA) is a strong oxidant with a redox potential higher than that of chlorine and does not form harmful disinfection by-products.

A survey of influenza A viruses (IAVs) in the Mingalar Taung Nyunt live bird market (MTN-LBM), Yangon, Myanmar, was conducted from December 2017 to December 2018. During the survey, 455 swab samples were collected from broilers, layers, backyard chickens and ducks from the MTN-LBM. Ninety-one pooled samples were screened for IAVs by real-time RT-PCR specific to the M gene.

Swine influenza virus (SIV) causes respiratory diseases in pigs and has impacts on both animal and human health. In this study, we conducted swine influenza surveillance in pig farms in the Yangon and Bago regions, Myanmar, during 2017-2019. Nasal swabs (n = 500) were collected from pigs in 10 swine farms.

The objective of the present study was to observe the changes of β-adrenergic receptor (βAR) protein expression in a canine model of heart failure (HF), and the function of cardiocytes after transfection with Adv-βAR. The canine model of chronic HF was induced by rapid right ventricular pacing and cardiocytes were isolated with collagenase II. Cardiocytes were transfected with Adv-βAR to observe contractile function with a motion edge-detection system of single cells.

Peroxisome proliferator-activated receptor γ (PPAR-γ) has a protective role in several neurological diseases. The present study investigated the effect of the PPAR-γ agonist, pioglitazone, on the mammalian target of rapamycin (mTOR) signaling pathway in a rat model of pentylenetetrazol (PTZ)-induced status epilepticus (SE). The investigation proceeded in two stages.

Lactose and dibasic calcium phosphate (DCP) were granulated with various concentrations of film-forming polymers by a stepwise spraying method to prepare a directly compressible matrix excipient. The film-forming polymeric latex of Eudragit RS-30D, Eudragit RL-30D, and Surelease (ethylcellulose) were used in this study as the source of the granulating materials. Better flowability and compressibility were observed for all the granulated particles than the polymer-free granules.
