Background: Pulsed electric field (PEF) has become a reality in the food industry as a non-thermal application. PEF is used due to its benefits such as increasing the extraction of anthocyanin or other bioactive substances, shortening the fermentation time, and reducing the microbiological load by electroporation. While the combination of nisin and EDTA showed a synergistic effect against Salmonella strain, chlorhexidine digluconate and streptomycin with nisin showed a partial synergetic effect; citric acid and sulfonamides with nisin showed an indifferent effect. The use of citric acid and chlorhexidine digluconate alone was very effective in Salmonella inhibition.

Power law model was used to describe the data. Temperature had no effect on the flow behavior index, but it affected the consistency index of the mixtures.
