In this paper, Krapcho's one-step decarbomethoxylation of oleuropein in DES is reported. Oleuropein used as reagent was extracted with water from olive leaves, widely available and inexpensive waste from the olive oil production chain. The reaction has been carried out in a series of ChCl-based DES of increasing acidity, with or without the addition of an amount of water, under microwave and conventional heating.

In this scientific work, a novel and green method for selective lipophilization of EVOO's bioactive phenolic alcohols (PAs), namely, tyrosol, hydroxytyrosol, and its metabolite homovanillyl alcohol as fatty acid esters, is elucidated. The PAs have been employed as hydrogen bond donors in the formation of natural deep eutectic solvents (NADES) with choline chloride (ChCl). The fast and cheap esterification method by formation of choline chloride-based deep eutectic solvents promotes the derivatization of PAs with various fatty acids as acylating agents in the absence of organic solvents and catalysts.

Article Synopsis
  • - The study explored ultrasound-assisted hot air drying (US-HAD) as a method to convert downgraded blackberries into powder, finding it reduced drying time and led to powders with a moisture content of 12%, outperforming traditional hot air drying (HAD).
  • - Physicochemical analyses revealed US-HAD cookies had higher antioxidant activity and total phenolic content compared to control cookies, indicating better nutritional qualities.
  • - Sensory analysis confirmed US-HAD cookies were more flavorful and acceptable, supporting the notion that incorporating US-HAD blackberry powder can mitigate food waste while enriching baked goods with health benefits.

Prolonged exposure to lead has been recognized as harmful to human health as it may cause neurotoxic effects including mitochondrial damage, apoptosis, excitotoxicity, and myelin formation alterations, among others. Numerous data have shown that consuming olive oil and its valuable components could reduce neurotoxicity and degenerative conditions. Olive oil is traditionally obtained from olive trees; this plant ( L.

Monoamine oxidase and xanthine oxidase inhibitors represent useful multi-target drugs for the prevention, attenuation, and treatment of oxidative damage and neurodegenerative disorders. Chimeric molecules, constituted by naturally derived compounds linked to drugs, represent lead compounds to be explored for the discovery of new synthetic drugs acting as enzyme inhibitors. We have previously reported that seven hydroxytyrosol-donepezil hybrid compounds play a protective role in an in vitro neuronal cell model of Alzheimer's disease.
