Article Synopsis
  • The study examined how vegetable type, size, and drying load impact the dehydration rates and quality of solar-dried carrots, sweet potatoes, and collard greens.
  • Significant differences were found in dehydration rates and beta-carotene content based on vegetable type, while vegetable dimensions influenced water activity.
  • The best dehydration results for carrots and collard greens showed specific dimensions and drying loads yielded the highest beta-carotene and vitamin A activity, highlighting some loss in nutrient content during the drying process.
