The consumption of probiotic foods is rather limited for many sectors of the population (vegans, lactose intolerant and celiacs). Therefore, it is necessary to offer functional alternatives for these sectors. Different red quinoa drinks were fermented with (QLPBB) and (QBLBB) at different times.

In recent years, there has been a considerable increase in the consumption of melatonin supplements for reasons other than those related with sleep (as an antioxidant, for anti-aging, and as a hunger regulator). Although the chemical synthesis of melatonin has recently been improved, several unwanted by-products of the chemical reactions involved occur as contaminants.

The present study evaluated the protective effect of the long-term consumption of white tea used at two different doses against the oxidative stress produced by aging and acute oxidation caused ADR treatment. At wearing, rats received distilled water (control), or 0.

Se pueden diferenciar dos tipos de intervenciones, por un lado aquellas intervenciones centradas en aumentar los niveles de actividad física, y por otro, aquellas que introducen además una parte de educación y valoración nutricional.

Methods: different formulations of the MMP (healthy MMP and functional MMP) have been elaborated by changing the type and amount of some of its ingredients. The nutritional composition, the caloric value, the fatty acid profile and the fat quality have been determined.
Background: White tea infusion (Camelia sinensis) has antioxidants properties. The infusion contains polyphenols that have been proposed to induce antioxidant response element (ARE) response via nuclear factor E2-related factor 2 (NRF2). Adriamycin (ADR) has antitumour properties and oxidative effects.
View Article and Find Full Text PDFIntroduction: the well known antioxidant properties of white tea include the prevention of cancer, neurodegenerative diseases and oxidative stress. Adriamycin can generate an amount of oxidative stress in vivo.
Objective: evaluate long term intake of white tea on plasma antioxidant capacity and on the fatty acid profile of liver and heart microsomes in animals subjected to acute oxidative stress.
Introduction: In the physical education context a well- known myth suggest that obese and unfit youth dislike physical education.
Objective: To examine if adolescents who dislike physical education have higher levels of fatness and lower of fitness than their peers.
Methods: Participants included 2606 (49.
The flavonoid content of tea (Camellia sinensis) has beneficial properties in the prevention of diseases. However, the mechanisms by which white tea can protect against oxidative stress remain unclear. To shed light on this issue, rats were given distilled water (controls), 0.

Fractions differed in thermal treatment, the bract position in the artichoke head and the cutting size. Contents of moisture, ash, protein, fat, dietary fibre, inulin, total phenolics, total flavonoids, caffeoyl derivatives and flavones were analysed.

The optimization of the extraction of natural antioxidants from white tea has fostered intensive research. This study has investigated the effects of ethanol-water mixtures, temperature and time on the extraction of polyphenols and antioxidant components from white tea. The response surface methodology was applied to identify the best extraction conditions.

However, during the digestive process, disaccharides are released into monosaccharides, in the case of sucrose into glucose and fructose, which reach the liver via the portal vein. Finally, they go into bloodstream in the form of glucose and in some cases as very low-density lipoproteins (VLDL).

It is certainly due to the modification of lifestyle habits and especially of the diet, as well as a lack of physical activity and sedentary living. Changes in the feeding pattern and the subsequent unbalance in the caloric profile of the diet may have had great importance in the occurrence of obesity.

Methods: There were studied 24 samples of Murcia's meat pie from the six best-selling retail establishments in this Region (four units per establishment). The moisture, protein, fat, carbohydrates, fibre and minerals, contents and the energy value, fatty acid profile and fat quality were analyzed using the Official Analysis Methods of Foods.
Background: University students are a part of the population potentially vulnerable in relation to their nutritional status.
Objectives: To evaluate energy intake, energy profile of the diet and prevalence of underweight, overweight and obesity in university students.
Methods: The study was conducted in 223 students (53% female) from the University of Murcia (Spain), mean age 21.
The aim of this paper is the description of a new version of the software application GRUNUMUR, a useful tool for human nutrition studies designed by the Nutrition Research Group from the Murcia University. Similar to the first, this second version offers the possibility to address different types of study: dietary habits (24 h recall, 7-days dietary record and Food Frequency Questionnaire), epidemiological, anthropometrical and clinical studies. The new version, called GRUNUMUR 2.

The present study aimed to assess the prevalence of undernutrition using 10 different diagnostic criteria described in the literature and to assess its association with energy intake in an institutionalised elderly population.
Methods: The cross-sectional study included 213 subjects, aged 65-96 years (135 women and 78 men), who lived in seven nursing homes in the province of Murcia, on the Mediterranean coast of Spain.
Background: Nutritional supplementation might be an effective strategy for improving the nutritional status and the quality of life of institutionalized fragile elderly.
Objectives: The prevalence of malnutrition and its relation with disease, and the influence of dietary supplementation by means of oral formulas on the nutritional status of elderly nursing home residents were assessed.
Methods: Two studies were carried out, one a cross-sectional survey in 31 subjects and the other a longitudinal-sectional survey in 19 subjects, both groups living in a public nursing home in the city of Murcia (SE Spain).

Aim: To evaluate the effect of the daily intake of a fruit & vegetable soup with high in vitro bioaccessibility of carotenoids on β-carotene and lycopene serum concentrations.
Methods: Fourteen healthy young men (24 ± 1 years) received 300 mL/day of a carrot, tomato, and broccoli soup, containing 3.9 mg β-carotene and 4 mg lycopene, for 4 weeks followed by a 4-week washout period.
