Quality attributes, antioxidant activity and color profile of orange-fleshed sweet potato grown in Vietnam.

This study analyzed the nutritional composition, bioactive compounds, antioxidant activities and estimated potential renal acid load (PRAL) score of orange-fleshed sweet potato (OFSP) grown in Vietnam. In addition, important functional groups of carotenoid compounds in OFSP were identified by Fourier transform infrared spectroscopy (FTIR); carotenoid pigments were detected and quantified by high-performance liquid chromatography (HPLC). The results showed that, OFSP had outstanding physicochemical characteristics, containing many nutrients, bioactive substances, minerals and fiber.

Impact of foam-mat drying conditions of "Gấc" aril on drying rate and bioactive compounds: Optimization by novel statistical approaches.

This study was conducted to optimize the foam-mat drying conditions to maximize quality [β-carotene and total polyphenol content (TPC)] and drying rate of "Gấc" aril powder by using two novel statistical techniques as Response Surface Methodology (RSM) and Artificial Neural Network (ANN) couple with Genetic Algorithm (GA). During production process, level of egg albumin (EA) used for foaming process and drying temperature mainly influenced the drying rate and content of antioxidant compounds in powder. ANN model of 3-10-3 showed more accuracy and faster prediction capacity than RSM model did.

Ultrasound-Assisted Extraction of Antioxidant Compounds from "Cẩm" Purple Rice Bran for Modulation of Starch Digestion.

Purple rice, locally known as "Cẩm" rice, is cultivated in the southern region of Vietnam. The bran of "Cẩm" rice is often disregarded and underutilized; nevertheless, it harbours substantial nutritive value, particularly in terms of antioxidant compounds. Additionally, sonication, an emerging and "green" technological approach, has been employed to augment the extraction efficiency of these antioxidants.

Optimization of Mulberry Extract Foam-Mat Drying Process Parameters.

Mulberry powder was created from the extract using a foam-mat drying process. The studies aimed to evaluate the effects of egg albumin, carboxymethyl cellulose (CMC), digestion-resistant maltodextrin (DRM) contents, and whipping time (5 to 15 min) on the foam properties. The impact of different drying temperatures (60 to 75 °C) on the quality of the finished mulberry powder was also noted.

Optimization of carrot fermentation conditions in rice bran bed using Lactobacillus plantarum.

Some physicochemical characteristics and bioactive compounds of three varieties of black cherry tomato (Indigo Rose, OG, F1:001) grown in Vietnam were investigated. Identification of Anthocyanin Compounds in Butterfly Pea Flowers ( L.) by Ultra Performance Liquid Chromatography/Ultraviolet Coupled to Mass Spectrometry.

Butterfly pea flower have great sensory attraction, but they have not yet been used widely in Vietnam. Extracts of butterfly pea flowers can be used conveniently as a natural blue colorant for food products. In this study, the identification of anthocyanin compounds in butterfly pea flowers was performed by UPLC coupled with a UV and Mass spectrometer instrument.

Burnout, Professional Fulfillment, Intention to Leave, and Sleep-Related Impairment Among Faculty Radiologists in the United States: An Epidemiologic Study.

Objective: To examine the prevalence of burnout in faculty radiologists in the United States and to explore the relationship between burnout and professional fulfillment (PF), intention to leave (ITL), and sleep-related impairment by gender.

Methods: This cross-sectional study was conducted through a voluntary anonymous, electronic survey of radiologists at 11 academic medical institutions participating in the Physician Wellness Academic Consortium between January 2017 and September 2018. Faculty radiologists who completed the survey were included in the study.

Characterization of gluten-free rice bread prepared using a combination of potato tuber and ramie leaf enzymes.

A combination of freeze-dried powder of disproportionating enzyme (D-enzyme)-containing potato tuber and β-amylase-containing ramie leaf was used to improve the gluten-free (GF) bread, and its physicochemical properties were characterized. The presence of D-enzyme and β amylase in the potato tuber and ramie leaf was confirmed. Sixty five percent of partially gelatinized rice flour and 20% corn starch was combined with 10% freeze-dried potato tuber and 1% ramie leaf powder, and baked.

Nanoscale Bupivacaine Formulations To Enhance the Duration and Safety of Intravenous Regional Anesthesia.

Intravenous regional anesthesia (IVRA; Bier block) is commonly used to anesthetize an extremity for surgery. Limitations of the procedure include pain from the required tourniquet, the toxicity that can occur from systemic release of local anesthetics, and the lack of postoperative pain relief. We hypothesized that the nanoencapsulation of the local anesthetic would prolong local anesthesia and enhance safety.

Stability of folic acid and 5-methyltetrahydrofolic acid in phosphate buffer (0.2 M; pH 7) toward thermal (above 65 degrees C) and combined high pressure (up to 800 MPa)/thermal (20 up to 65 degrees C) treatments was studied on a kinetic basis. Residual folate concentration after thermal and high pressure/thermal treatments was measured using reverse phase liquid chromatography.
