This large amount of byproduct or shellfish processing waste contains 20-40% chitin, that can be extracted using chemical or greener alternative extraction technologies. Chitin and its derivative (chitosan) are natural polysaccharides with nontoxicity, biocompatible, and biodegradable properties.
