Nanoparticles based on food-grade materials are promising materials to develop Pickering emulsions for food applications. Initially, this study focuses on the development of nanoparticles through the utilization of a soluble complex of whey protein concentrate (WPC) and cress seed gum (CSG), which were modified by calcium chloride (CaCl) as a cross-linker. The response surface methodology was used to investigate the impact of different concentrations of WPC (1-4% /), CSG (0-1% /), and CaCl (1-3 mM) on particle size, polydispersity index (PDI), and Zeta potential.

The results indicated that adding LPSG and FG had no significant effects on acidity and pH ( > .05).

In this study, bread parameters such as specific volume, porosity, textural characteristics, zinc, iron, phytic acid and organoleptic properties were investigated. In this research, different percentages of sourdough (15-30%) and fermentation time (30 - 120 min) were applied.

The kinetics of changes in jujube honey samples heated at various temperatures (45, 55 and 65 °C) over 10 days were studied. Increasing treatment temperature and time caused an increase in all three parameters including, antioxidant activity, BPF and TPC.

The results showed that an increase in MMT concentration was accompanied by a decrease in water solubility, thickness, and elongation at break.

The film's colour became darker and more yellowish and had a lower gloss as the levels of ZEO or MEO were increased. Antioxidant activity of the films was determined using 2,2-diphenyl-1-picrylhydrazyl (DPPH), and ferric-reducing antioxidant power assays.

Soluble soybean polysaccharide (SSPS) films incorporated with Zataria multiflora Boiss (ZEO) or Mentha pulegium (MEO) at various concentrations were prepared and characterized. The presence of ZEO and MEO improved polysaccharide interactions, reducing the films' water solubility and water vapor barrier properties, but did not markedly modify their moisture content or thickness.
