In recent decades, frozen dough has become an attractive means of preserving and offering the convenience of fresh-tasting foods while retaining their nutritional benefits. However, the frozen dough industry still faces significant challenges related to processing, freezing, and storage that affect the dough's quality and stability during thawing. Understanding the complex interactions between proteins (gluten, glutenin, gliadin, and glutenin macropolymers), starch dynamics (gelatinization and retrogradation), and water distribution-particularly how ice crystals interact with the gluten-starch matrix-is essential for improving frozen dough quality.

In this study, the potential of borophene (BOR) as a drug delivery system for resveratrol (RVT) was explored to evaluate its efficacy in cancer treatment. The excited, electronic, and geometric states of RVT, BOR, and the borophene-adsorbed resveratrol complex (BOR@RVT) were calculated to assess BOR's suitability as a drug carrier. Noncovalent interaction (NCI) plots indicated a weak force of attraction between BOR and RVT, which facilitates the offloading of RVT at the target site.

The study investigates the complex interplay among [Formula: see text] emissions, energy consumption, and economic growth in China, employing the Environmental Kuznets Curve (EKC) framework to analyze the dynamics from 1990 to 2022. The research contributes to the urgent need for sustainable development by filling important gaps in comprehending China's specific challenges and potential and considering the relationship between economic advancement and environmental quality. This study utilizes advanced econometric tools, including the AutoRegressive Distributed Lag model, Vector Error Correction Model, and AutoRegressive Integrated Moving Average, to comprehensively examine the complicated relationship between variables, considering both short-run and long-run dynamics.

Achieving Sustainable Development Goals (SDGs) in an era of rapid economic growth poses a significant challenge for policymakers and researchers. This study investigates the interconnected relationships between economic growth, innovation promoters, and sustainable development using data from 102 countries between 2016 and 2022. Employing multiple linear regression (MLR) models, we identify crucial factors influencing sustainable development.

Maca has shown broad application prospects as a new food resource. The function of maca is directly affected by its geographical origin, and an effective method for studying traceability must be established. This study aimed to discriminate maca from different regions at large scales (Peru and China) and small scales (Yunnan, Xinjiang, and Tibet in China) through geographical authentication using the stable isotope ratio (SIR) (δC, δN, δH and δO) and mineral elemental fingerprints combined with chemometrics.
