The present study evaluates the oxidative stability in chikkis enriched with omega 3 fatty acids using natural antioxidant from Rosmarinus officinalis. The best condition for the extraction of phenolic compounds from Rosmarinus officinalis L. (rosemary) was established, and the antioxidant activity was demonstrated based on inhibition of DPPH free radical formation.

This contemporary study summarizes a new method to determine phenol-degrading bacteria isolated from different areas. The method was used for testing a total of 72 bacteria collected from the natural environment and five known strains obtained from diagnostic and research laboratories employing 200 mg/L phenol (the linear range saturation concentration).
