In this study, sumac extract was utilized as an active ingredient and combined with grass pea protein isolate and polyvinyl alcohol to produce novel active nanofiber mats using an electrospinning technique. First, nanofiber mats were fabricated by different ratios (100:0, 90:10, 70:30, 50:50, 30:70, 10:90, 0:100) of grass pea protein isolate and polyvinyl alcohol. The characterization of nanofiber mats revealed that the nanofibers with a polymer ratio of 50:50 had appropriate mechanical properties and presented a fibrous and uniform morphology.

In this study, the influence of pomegranate peel extract (PPE) and pomegranate concentrate (PC) on improving the oxidative stability of cream powder in comparison with synthetic antioxidant (Butylated hydroxytoluene (BHT)) during the storage period at 20°C (8 weeks) and 45°C (4 weeks) was evaluated. The finding exhibited that peroxide, -anisidine, and total oxidation (TOTOX) values increased during the storage period. Samples containing PPE and PC showed suitable performance in controlling the cream powder oxidation.

A rapid user-friendly paper-based test strip using zinc microparticles in conjugation with Griess reagent was developed for nitrite and nitrate detection. Test strips were fabricated using a simple and fast method of step-by-step immersion into reagents so that each strip contained a single detection pad for nitrite detection and another separate pad for nitrate detection. To reduce nitrate to nitrite, zinc microparticles suspended in ethanolic solution of polyvinylpyrrolidone (PVP) were uniformly immobilized on the paper strips that were previously impregnated in the Griess reagent and dried.

The aim of this study was to develop a new active coating of layer-by-layer (LbL) structure composed of alginate (as polyanions) and chitosan (as a polycation) containing sulfated polysaccharide (fucoidan) from , to protect rainbow trout fillets during refrigerated storage. Chitosan and alginate do not combine with each other as a homogeneous solution, so they are suitable for multilayer coatings. Rosmarinic acid was esterified with ethanol, butanol, and hexanol to produce ethyl rosmarinate, butyl rosmarinate, and hexyl rosmarinate, respectively. The antioxidant capacities of the rosmarinic acid esters were evaluated in linseed oil, organogel, and emulsion gel during the initiation and propagation phases of peroxidation. This study explored the active food packaging application of phycocyanin- and Spirulina extract-loaded gliadin electrospun fibers (GPhy and GSPE). SEM findings confirmed that the morphology of fibers was tubular, showing the GPhy and GSPE as the optimum fibers.
