The aim of this study was to encapsulate hyssop (Hyssopus officinalis L.) extract obtained through ultrasound-assisted cold plasma pretreatment extraction within a double emulsion stabilized by soy protein isolate alone (SPI) and combined with chia seed gum (CSG) in the external aqueous phase on the stabilization of canola oil. FTIR analysis verified that there were electrostatic interactions between CSG and SPI.

Hyssopus officinalis L (Hyssop) is a good source of phenolic compounds. However, conventional methods for extraction of these compounds typically take a long time and have relatively low recovery rates. This study focused on cold atmospheric plasma (CAP) pretreatment and investigated its effects on the ultrasound-assisted extraction (UAE) of phenolic compounds from hyssop.

To this end, the microstructure of pre-gelatinized corn flour was compared to the natural one. The result of the electron microscope image indicated the extension of structure and further swelling of the pre-gelatinized corn flour as compared to the natural one.

In this study, the effect of natural macromolecules as carrier agents on the biological activity of nano-encapsulated Bene hull polyphenols (Pistacia atlantica subsp. Mutica) through W/O/W emulsions was evaluated. The W/O microemulsions as primary emulsions and a complex of soy protein isolate and basil seed gum (SPI-BSG), whey protein isolate and basil seed gum (WPI-BSG) and also Hi-Cap 100 in the outer aqueous phase were used to produce W/O/W nano-emulsions.

Dough rheological characteristics, baking (specific volume and sensory evaluation), and textural properties (at first day and during storage for 5 days) were determined in Barbari flat bread. Germ and residue fractions were incorporated at various levels ranged in 0.

In the present study, the Response Surface Methodology (RSM) was used to determine the optimum improver gel formulation which gave the best quality, shelf life, sensory and image properties for Barbari flat bread. Sodium stearoyl-2-lactylate (SSL), diacetyl tartaric acid esters of monoglyceride (DATEM) and propylene glycol (PG) were constituents of the gel and considered in this study.

To evaluate the antioxidant efficiency of different concentrations of curcumin (120, 160 and 200 ppm) compared with tert-butylhydroquinone (TBHQ) (120 ppm) and α-tocopherol (200 ppm) at two different temperatures (25°C and 55°C) under dark and light conditions during 90 days, the soybean oil with no added antioxidant was used as a food model, and its fatty acids profile was determined by GC. Results indicated that increasing concentration of curcumin leads to significantly decreased oxidation rates.

TBHQ was not able to considerably increase the OS(CDV) (7.51) of the VOO (7.
