This study aimed to evaluate the impact of olive leaf extract (OLE) on the quality of Cantal cheese. The cheeses were fortified with different concentrations (Control, 1, 2, and 3 %) of OLE and analysed for quality during storage. The cheeses were evaluated on days 1, 28, and 63 for physicochemical, compositional, textural, rheological parameters, colour, microbiological analysis, and antioxidant activity.

Trees of the olive () cultivar Zalmati grown in Zarzis (Mednine) with different main climate traits (temperature, precipitation, humidity, and wind) were studied for 3 years to evaluate the impact of climate on the quality of olive oil. The effect on quality indices, free fatty acids, peroxide value, UV spectrophotometry, pigment content, and phenol and O-diphenol concentrations, of the three harvesting periods was considered. Linking to the purity parameters (fatty acid, triacylglycerol, total phenols, and tocopherols composition), our results showed a trivial reduction in fatty acid composition and polyphenols content caused by the high temperature.

An effective and economical process was established to produce hydroxytyrosol, a naturally occurring orthodiphenolic antioxidant molecule found in olive oil from its monophenolic precursor tyrosol. The approach proposed in the present work presents an environment-friendly method based on wet hydrogen peroxide catalytic oxidation with montmorillonite KSF as an inexpensive and environmentally benign solid acid at room temperature. The evaluation of the impact of olive ripening degree on the stability of extra virgin olive oils not only by determining the oxidative stability index, the 1-diphenyl-2-picrylhydrazyl (DPPH) radical test, but also by studying the variation of their sensory profiles, plays a key role in the assessment of the overall olive oil quality. In the present work, a novel water-soluble polysaccharide (LWSP) was purified from Katan seeds. Polysaccharide was structurally characterized by NMR spectroscopic analysis, thin-layer chromatography (TLC), high-performance liquid chromatography (HPLC), Fourier-transform infrared spectroscopy (FTIR) analysis, X-ray diffraction (XRD), and UV absorption. The present study is aimed at the evaluation of the phytochemical profile and the biochemical properties of methanolic extracts obtained from different parts of Rumex algeriensis and Rumex tunetanus, two relict species limited to the North Africa. Phytochemical analyses of these extracts were performed using standard colorimetric procedures, HPLC-DAD, and HPLC-DAD-ESI/MS, and their antioxidant/free radical scavenging capability was estimated through several in vitro cell-free assays. Moreover, the anti-inflammatory potential of these extracts was demonstrated in an in vitro model of acute intestinal inflammation using differentiated Caco-2 cells.
