Dietary nitrate, which is mainly derived from the diet and absorbed in the intestinal tract, is a key messenger that connecting oral and general health. It proved to be a non-gelator in a single solvent even when heated or sonicated. However, it could self-assemble in a CHCl (CH Cl )/n-hexane mixture to form a thermo-responsive supramolecular organogel.
