A high consumption of solid fats is linked to increased inflammation and a risk of cardiovascular diseases. Hence, in recent years, there has been increasing interest in the development of oleogels as a fat substitute in food products. Oleogels are edible gels that contain a large amount of liquid oils entrapped in a 3D network and that can potentially be applied to spreads, bakery goods, meat, and dairy products in order to lower their saturated fat content while maintaining a desirable food texture and mouthfeel.

Two new surfactant sensors were developed by synthesizing Pt-doped acid-activated multi-walled carbon nanotubes (Pt@MWCNTs). Two different ionophores using Pt@MWCNTs, a new plasticizer, and (a) cationic surfactant 1,3-dihexadecyl-1H-benzo[d]imidazol-3-ium-DHBI (Pt@MWCNT-DHBI ionophore) and (b) anionic surfactant dodecylbenzenesulfonate-DBS (Pt@MWCNT-DBS ionophore) composites were successfully synthesized and characterized. Both surfactant sensors showed a response to anionic surfactants (dodecylsulfate (SDS) and DBS) and cationic surfactants (cetylpyridinium chloride (CPC) and hexadecyltrimethylammonium bromide (CTAB)).

Widespread usage of pesticides in agricultural practice caused their residues to appear in water and food products intended for human consumption. The potential toxicity of these resources has raised awareness about pesticide tracking in the environment. The specific activities of natural radionuclides ((40)K, (226)Ra and (232)Th) and Chernobyl-derived (137)Cs were measured in soil profiles representing typical soil types of Belgrade (Serbia): chernozems, fluvisols, humic gleysols, eutric cambisols, vertisols and gleyic fluvisols. The influence of soil properties and content of stable elements on radionuclide distribution down the soil profiles (at 5 cm intervals up to 50 cm depth) was analysed. Correlation analysis identified associations of (40)K, (226)Ra and (137)Cs with fine-grained soil fractions.
