The main objective of the current research was to explore the physicochemical, microbial and sensorial attributes of cereals bran cell wall (CBCW) enriched bread. In 1st phase, the cell wall wasextracted from different cerealsbran and characterized for its dietary fiber profile and antioxidant activity. In addition, bread was prepared with the additionof CBCW at different ratios and explored for physicochemical, microbialand sensorial characteristics.
