Oral Allergy Syndrome (OAS) is a special contact allergy conditioned by specific amino acids in food allergens, usually fruits, as well as some proteins from different pollens. It is usually manifested in the mouth, however relatively little is known about the syndrome in Odontology. OAS is a fairly common adverse reaction that occurs after ingesting certain foods, such as peaches or apples, produced in atopic individuals who usually suffer from rhinitis, bronchial asthma or both.
