Article Synopsis
  • - Hypertension during pregnancy complicates 5%-10% of pregnancies and significantly contributes to maternal and perinatal health issues, especially in low- and middle-income countries, but few studies focus on these outcomes.
  • - A cohort study conducted in Vietnam with 255 women diagnosed with hypertensive disorders revealed high rates of adverse outcomes, including preterm delivery in over 60% of cases, with common complications being HELLP syndrome and placental abruption.
  • - Factors such as highest diastolic blood pressure, symptom severity, and birth weight were identified as independent predictors of adverse outcomes, emphasizing the need for monitoring and intervention in women with hypertension during pregnancy.

The O/W emulsions were prepared using perilla seed oil (PSO) dispersed in soy sauce (PSE) and in distilled water (PWE), respectively. Octenyl succinic anhydride-modified starch (OSA starch, 3 wt%) showed the most efficient emulsifying ability and its stabilities of emulsion and oxidation in PSE and PWE were studied at different storage periods (0, 4, and 8 weeks) and temperatures (4, 25, and 40 °C). Negligible change in droplet diameter of PSE was observed without coalescence or flocculation during storing for 8 weeks at 4 °C.
