Article Synopsis
  • Cellulose, a key component of lignocellulosic biomass, can be broken down into glucose by cellulases, which are important for apple juice production as they help clarify the juice and reduce sedimentation.
  • A new bacterial isolate, Bacillus licheniformis strain-MA1, was identified as a cellulase producer, and conditions were optimized to significantly boost enzyme production using agricultural waste such as corn cob.
  • The optimized cellulase treatment led to a notable increase in apple juice yield (88.2%) compared to untreated juice (75.4%), along with a higher extraction of volatile compounds, enhancing the juice's quality.
