This study investigated the effect of hot water blanching (HWB), high-humidity air-impingement blanching (HHAIB), different HHAIB blanching times (2, 4, 6, 8, and 10 min), and different HHAIB blanching temperatures (80, 85, 90, and 95°C) on texture quality, lignin content, weight loss, color, microstructure, and drying kinetics of bamboo shoots. After HWB treatment, the lignin content of bamboo shoots was apparently lower than that of HHAIB and the samples obtained the highest weight loss value of 6.13%.

Purpose: To investigate the immunopathology and immunomodulatory roles of interleukin-12 (IL-12) in periodontal disease.

Methods: Ninety-eight patients with chronic periodontitis from January 2016 to January 2019 were enrolled and divided into mild group (30 cases), moderate group (35 cases) and severe group (33 cases) according to the severity of periodontitis; meanwhile, 30 healthy subjects who underwent periodontal examination in our hospital were selected as the control group. Clinical periodontal indicators including probing depth(PD), attachment loss(AL), plaque index(PLI), bleeding index(BI), Th cell expression (Th1, Th2, Th17) in peripheral blood, IL-12 levels in gingival crevicular fluid (GCF) and serum were measured.

Sirtuin 7 (SIRT7), an NAD-dependent deacetylase, plays vital roles in energy sensing, but the underlying mechanisms of action remain less clear. Here, we report that SIRT7 is required for p53-dependent cell-cycle arrest during glucose deprivation. We show that SIRT7 directly interacts with p300/CBP-associated factor (PCAF) and the affinity for this interaction increases during glucose deprivation.
