The goal of the study was to investigate the concentration of heavy metals and polycyclic aromatic hydrocarbons (PAHs) in 84 samples of mussels, collected from supermarkets and fish markets in Serbia. Lead, cadmium, mercury and arsenic concentrations were determined using an inductive coupled plasma mass spectrometry method. Sixteen PAHs were determined using a gas chromatography-mass spectrometry method.

The traditional smoking procedure, which is the use of open fire, can lead to the formation of PAHs in sausages. The aim of this paper was to assess the types and concentrations of 16 PAHs in 30 samples of , a traditional smoked sausage. In general, some samples showed high values of anthracene and acenaphthylene.
