Effects of Maillard Reaction on Volatile Compounds and Antioxidant Capacity of Cat Food Attractant.

In this study, self-made cat food attractant was prepared by Maillard reaction using hydrolysate of grass carp waste as raw material and glucose and cysteine hydrochloride as substrate.
