For braised pork belly, a popular traditional Chinese dish, we lack a scientific knowledge to reduce the formation of harmful heterocyclic amines (HAs) and advanced glycation end products (AGEs) while maintaining sensory quality. This study aimed to clarify the factors affecting the formation of free and protein-bound HAs and AGEs during the braised pork belly cooking process using UPLC-MS/MS analysis. The results indicated that soy sauce significantly promoted the formation of HAs, with organic soy sauce exhibiting the strongest promoting effect, increasing HAs by 270.

Binding the attributes of a sensory source is necessary to perceive it as a unified entity within its surrounding scene as in the cocktail party problem in auditory perception. It is postulated that coherent temporal modulation of a source's features binds them and enhances their perception. Background: Fatty acids serve as a crucial energy source for tumor cells during the progression of chronic lymphocytic leukemia (CLL). The present study aims to elucidate the characteristics of fatty acid metabolism (FAM) in CLL, construct a related prognostic score, and investigate the regulatory role and mechanisms of FAM in CLL development.

Methods: Bulk RNA sequencing data from CLL patients and healthy controls were analyzed to identify differentially expressed fatty acid metabolic genes.
