A combination of sous-vide (SV) and enzymatic treatment (one commercial, Neutrase (NE), and two fruit-extracted enzymes obtained from kiwifruit and pineapple, KE and PE, respectively) was applied to pork fore shanks prepared at different temperatures (45, 60, 70, and 100 °C) for 0.5, 4 or 8 h, and the properties of pork were compared. For the hardness, SV itself resulted in a 27% decrease; however, a significant softening effect could be obtained by the addition of enzymes (38-60%).

Ultrasonic treatment (UT) was applied to brown rice at two different conditions: mild (25 °C, 30 min) and harsh (50 °C, 60 min) after soaking for several times (2, 3, 5, and 8h). After UT, starch was isolated from the brown rice grains, and the physicochemical properties of the starch, as well as the textural and nutritional properties of the grains, were compared. After UT, the cooked brown rice grains was softer in proportion to soaking time, and the hardness of brown rice soaked for 8h and then ultrasound treated at harsh condition was similar to that of cooked milled rice.

Channels of maize starch granules are lined with proteins and phospholipids. Therefore, when they are treated with reagents that react at or near the surfaces of channels, three types of crosslinks could be produced: protein-protein, protein-starch, starch-starch. To determine which of these may be occurring and the effect(s) of channel proteins (and their removal) on crosslinking, normal and waxy maize starches were treated with a proteinase (thermolysin, which is known to remove protein from channels) before and after crosslinking, and the properties of the products were compared to those of a control (crosslinking without proteinase treatment).
