Objective: To explore the differences in fat and fatty acids content between freshwater and saltwater fish.
Methods: The fat and fatty acids content in 83 fish meat samples from four regions(Hainan, Jiangsu, Fujian, and Guangxi) were detected by national standard method. Mann-Whitney U tests and t-tests were used to compare the differences in fat and major fatty acid content between freshwater and saltwater fish.
Objective: To detect phenolic acid compounds in various fruits and explore the differences in phenolic acids among different types of fruits.
Methods: The collected 75 types of fruits were classified into 6 categories: citrus、melon、drupe、berry、tropical fruit and pome fruits. The phenolic acid compounds were detected by high performance liquid chromatography-mass spectrometry.
Objective: To establish a high-performance liquid chromatography-mass spectrometry(HPLC-MS/MS) method for detecting 13 kind of free and bound phenolic acids(chlorogenic acid, protocatechuic acid, ferulic acid, p-coumaric acid, gallic acid, gentisic acid, vanillic acid, caffeic acid, syringic acid, sinapic acid, rosmarinic acid, salicylic acid, p-hydroxybenzoic acid) in fruits, and optimize the pre-treatment conditions to meet the detection requirements for phenolic acid content in various types of fruits.
Methods: Free phenolic acids in fruits were extracted using methanol through ultrasonic extraction. Conjugated phenolic acids in the centrifuged residue were released by alkaline hydrolysis and extracted with ethyl acetate.
