According to research, egg quality and lysozyme content are influenced by a number of factors, which are mostly known in the case of commercial hybrids, while in breeds included in genetic resources conservation programmes, new research results in this regard are emerging. The aim of the study was to determine the effect of egg laying time and genotype of selected Polish native breeds of hens on egg quality and lysozyme content and activity in the albumen. The study material consisted of eggs collected from four strains of laying hens included in the Polish conservation programme, i.

The aim of the study was to compare the nutritive value of eggs from Polish Crested chickens (PCr) to that of eggs from commercial hybrid Hy-Line Brown (HLB) and to examine the effect of storage conditions on physical quality parameters. In total, 135 PCr (9 pens) and 75 (5 pens) HLB chickens were kept on litter and fed commercial feed. At laying peak (36 wk), all eggs (n = 66/ genotype) were collected on the same day and divided into 3 groups (n = 20): group I was assessed on the day after laying; group II was analyzed after 28 d of storage in a fridge; group III, after 28 d in storeroom conditions of 19.

The aim of the study was to determine the effect of marinating with fermented milk products (buttermilk and sour milk) on the physical characteristics, microbiological quality, and sensory acceptability of Rhode Island Red (RIR) hen meat after the first year of laying use. The hen breast meat was marinated with fermented dairy products, buttermilk and sour milk, by the immersion method for 12 h at 4 °C. The assessed features included the quality of raw and roasted marinated and non-marinated meat in terms of physical characteristics (marinade absorption, water absorption, pH, L*, a*, b* colour, shear strength, texture profile analysis (TPA) test), microbiological parameters, and sensory characteristics.

This study investigated the welfare of laying hens in different non-caged housing systems, namely a deep-litter barn system (BS), a free-range system (FRS) and an organic system (OS). The study was conducted on 270 hens of a native breed Green-legged Partridge (Z-11) and 270 Hy-Line Brown hybrids. Visual scans were performed to record behaviour of hens.
