Therefore, this study aimed to develop and validate an analytical methodology for the simultaneous determination of aflatoxins, enniatins, beauvericin and T-2 toxin in human hair, based on a pretreatment stage prior to salt-assisted liquid-liquid extraction and followed by high performance liquid chromatography coupled to high resolution Q-TOF mass spectrometry for the first time. Washing with a non-ionic detergent was successfully applied, whereas enzymatic digestion with Pronase E was mandatory for releasing mycotoxins from the hair matrix.

Validated extraction methods from in vitro digestion phases are necessary to obtain a suitable bioaccessibility study of mycotoxins in bakery products. In this study, the antifungal activity of white mustard bran (MB), a by-product of mustard () milling, and white mustard seed flour (MF) was tested against mycotoxigenic fungi in the agar diffusion method. The results obtained were posteriorly confirmed in a quantitative test, determining the minimum concentration of extract that inhibits the fungal growth (MIC) and the minimum concentration with fungicidal activity (MFC).
