This study aimed to investigate the effect of ultrasound-assisted HO (US/HO) reaction on degradation parameters and kinetics, physicochemical properties and prebiotic activity of longan polysaccharide (LP). Results showed that US/HO had a synergistic effect on the degradation of LP, and its kinetic equation followed to the fist - order model. US/HO degradation did not change the chemical and monosaccharide composition of LP but altered their ratio.

Article Synopsis
  • The bioactivity of polysaccharides is influenced by their fermentation by gut Bacteroides, which varies based on species and polysaccharide characteristics.
  • Longan polysaccharide (LP) and its ultrasonically treated version (DLP-8) were tested for their effects on six Bacteroides species, with Bacteroides uniformis showing the highest growth with DLP-8.
  • DLP-8, which has a lower molecular weight, was more effectively degraded and utilized by B. uniformis, resulting in higher production of short-chain fatty acids compared to LP.

Lactobacillus strains have emerged as promising probiotics for enhancing the bioactivities of plant-based foods associated with flavonoid biotransformation. Employing microbial fermentation and mass spectrometry, we explored flavonoid metabolism in lychee pulp fermented separately by Lactiplantibacillus plantarum and Limosilactobacillus fermentum. Two novel metabolites, 3,5,7-trihydroxychromone and catechol, were exclusively identified in L.
