Diphenylamine (DPA) is a harmful pesticide widely used to control post-harvest scald of fruits. In this study, rapid and sensitive determination of DPA was realized by the development of an effective electrochemical sensor, which was fabricated by coupling La-doped NiWO nanoparticles (La/NiWO) with reduced graphene oxide (rGO), and the obtained rGO/La/NiWO nanocomposite was modified on glassy carbon electrodes (GCEs). The morphologies, structures and compositions were well characterized, and the effects of La doping and the introduction of rGO on the crystal structure and electrochemical performance were discussed.

The use of deep eutectic solvents (DESs) has great prospects because of the green and efficient characteristics, which can be used for developing analytical methods for foods. In this research, assisted by ultrasonic waves, a liquid-liquid microextraction detection method combined with gas chromatography was established for three anaesthetics (eugenol, isoeugenol, and methyl isoeugenol) in aquatic food. The processing conditions including the components, ratio of hydrogen bond acceptor and hydrogen bond donor, DES volume, ultrasonic time, and pH were evaluated and optimised to improve the extraction efficiency, which was based on the DES structures and properties.

Casein phosphopeptides (CPPs) are phosphorylated fragments of casein, which have a variety of biological functions such as promotion of mineral absorption, antioxidation and prevention of dental caries. This study investigated CPPs in milk and yogurt fermented by () and () with high performance liquid chromatography-tandem mass spectrometry. The results showed that milk contained endogenous CPPs, which were mainly derived from high abundance of caseins -CN and -CN, in the role of endogenous protease.

Proteins are the most prominent bioactive component in deer antler velvet. The aim of the present study was to track the fate of protein of antler velvet by protein digestomics. The peptide profile identified by LC-MS/MS and the in vitro bioactivity of antler velvet aqueous extract (AAE) were investigated in simulated gastrointestinal digestion.

Article Synopsis
  • This study examined how peptide profiles in yogurt affect its bioactivity during simulated digestion in the gastrointestinal tract.
  • A total of 250, 434, and 466 peptides were identified in yogurt, gastric digests, and pancreatic digests, respectively, with 40 peptides surviving the entire digestion process.
  • The research found that pancreatic digests had significantly stronger ACE and DPP-IV inhibition rates compared to yogurt and gastric digests, indicating that yogurt's bioactivity improves after digestion due to the presence and proportion of certain bioactive peptides.

Based on the shotgun proteomic method, rape bee pollen protein was prepared with ultrasonic extraction and digested by trypsin, then separated and sequenced by reversed-phase liquid chromatography-tandem mass spectrometry (RPLC-MS/MS), followed by protein database searching. After the above analysis, 353 peptides were identified and the molecular biological functions of 239 proteins have been known. The identified molecular biological functions of these proteins mainly included binding activity, enzyme activity, transporter activity, inhibitor activity and so on.
