This study optimized the extraction process of crude polysaccharides from leaves (PNLP) using the ultrasonic-assisted dual-enzyme method through a single-factor combined with response surface experiment. The crude polysaccharides were subsequently purified and isolated with DEAE-Cellulose 52, followed by structural analysis, evaluation of antioxidant activity, and examination of digestive enzyme inhibition. The hypoglycemic effects of the purified components were further clarified.

Diabetic cognitive dysfunction is one of the important comorbidities and complications of diabetes, which is mainly manifested by loss of learning ability and memory, behavioural disorders, and may even develop into dementia. While traditional anti-diabetic medications are effective in improving cognition and memory, long-term use of these medications can be accompanied by undesirable side effects. Therefore, there is an urgent need to find safe and effective alternative therapies.

Calcium deficiency has garnered significant attention as a global public health issue. A new generation of calcium supplements, peptide-calcium chelates, is expected to increase in market value. In this study, we produced MORP (MW < 1 kDa) from Moringa oleifera leaf protein via enzymatic hydrolysis for chelation with Ca to produce MORP-Ca.

Article Synopsis
  • Researchers developed a new peptide, MMGGED, from defatted walnut meal, which effectively binds calcium, and created a stable peptide-calcium chelate, COS-MMGGED-Ca, through glycation.
  • * The study identified how well COS-MMGGED binds calcium (88.75%) and its ability to steadily release calcium while improving processing performance with increased thermal stability.
  • * Experimental results showed COS-MMGGED significantly enhances calcium transport compared to standard forms, suggesting its potential use in creating more effective calcium supplements and utilizing walnut meal in a high-value way.*

The nanozyme-linked aptamer-sorbent assay (NLASA) is a rapid way to screen and characterize aptamer binding to targets. In this paper, a MnO@AuNPs@aptamer (Apt) based NLASA coupled with colorimetric-SERS dual-mode for Staphylococcus aureus (S. aureus) detection is presented.

Article Synopsis
  • The study explored how different concentrations of sodium alginate (0.2%-0.8%) affect the properties of succinylated walnut glutenin (GLU-SA).
  • Acylation led to a significant reduction in particle size and zeta potential while altering the protein structure, making it more suitable for further modifications.
  • The combination of GLU-SA and ALG enhanced functional properties like gel formation and emulsification, suggesting potential applications in protein and oil product processing.

Nowadays, there is an increasing demand of healthier plant calcium supplements. leaves (MOL) are rich in calcium and thus are promising candidates for developing efficient calcium supplements. Here, using fermentation-based approaches, we developed a leaf ferment (MOLF), which contents higher levels of calcium.
