The effect of two commercial formulations (incorporating mepanipyrim and tetraconazole as active substances) on the metabolism of Saccharomyces cerevisiae Lalvin T73™, growing on a synthetic grape must, and their influence on the alcoholic fermentation course and the biosynthesis of volatiles derived from phenylalanine catabolism was studied. No relevant effects were observed for mepanipyrim except for glycerol production. On the contrary, in the presence of tetraconazole many genes and some proteins related to cell cycle progression and mitosis were repressed.

Zhenjiang aromatic vinegar is a famous traditional fermented cooking ingredient in China, with multiple nutritional and medicinal applications. Zhenjiang aromatic vinegar extract (100-400 μg/mL) is rich in polyphenols increased the glucose uptake and glucose consumption in high glucose-induced insulin resistant HepG2 (IR-HepG2) cells. The main objective of this study was to develop a simple and efficient spectrophotometric technique combined with chemometrics for the simultaneous determination of sulfamethoxazole (SMX) and trimethoprim (TMP) in drug formulations. Specifically, we sought: (i) to evaluate the potential use of rank annihilation factor analysis (RAFA) to pH gradual change spectrophotometric data in order to provide sufficient accuracy and model robustness; and (ii) to determine SMX and TMP concentration in drug formulations without tedious pre-treatments such as derivatization or extraction techniques which are time-consuming and require hazardous solvents. In the proposed method, the spectra of the sample solutions at different pH values were recorded and the pH-spectra bilinear data matrix was generated.

In this study, heat-assisted extraction (HAE) was used to maximize ergosterol extraction from Pleurotus ostreatus (PO) and Pleurotus eryngii (PE) using response surface methodology (RSM). Different temperature (T) and time (t) conditions were applied to understand their influence on the extraction yield (Y), ergosterol purity in the extracted material (mg g R, Y) and ergosterol content in the two Pleurotus species (mg per 100 g dw, Y). A circumscribed central composite design was used to evaluate the interactive effects of extraction variables and the optimal conditions were determined using second-order polynomial mathematical models to describe the responses obtained.

Citric acid, quercetin, dried chestnut flowers and an aqueous extract of chestnut flowers were screened as candidates for preserving a drinkable nutraceutical preparation for 45 days. The assays encompassed antioxidant and antimicrobial activities, nutritional and chemical profiles, and individual profiles of fatty acids and mineral composition, all of which in comparison with a sodium benzoate, a synthetic preservative. The centesimal composition of the nutraceutical formulation was mainly composed of carbohydrates, followed by proteins and fat, with moisture levels between 66% and 71%.

Manuka honey (MH) is a natural food with many beneficial properties to human health, thanks to its high variety of bioactive compounds; however, little is known about its bioaccessibility.
