This study aims to assess the nutritional value, sodium content and fat quality index of seven commercially relevant demersal fish species from the Azores Region: blackspot seabream (), blackbelly rosefish (), splendid alfonsino (), alfonsino (), forkbeard (), offshore rockfish () and common mora ().
