In this study, we investigated the changes in untargeted metabolites using UHPLC-MS/MS and the flavors of nonflavored (BS1) and flavored (BS2) roasted beef using GC-MS throughout a 6-month frozen period. A total of 509, 659, and 496 metabolites met the conditions for differential screening, and 56, 103, and 47 differential metabolites were recognized between BS1 and BS2 at 0, 3, and 6 months of frozen periods, respectively. The total relative abundance of organic nitrogen compounds, phenylpropanoids, polyketides, organic acids and their derivatives, and benzenoids increased during frozen storage at 3 months and then decreased at 6 months.

Polyzwitterions refer to polymers containing both positive and negative charged groups in one side chain, which have shown unique physicochemical properties and significant potential in diverse applications due to their amphiphilic and net-neutral charged properties. This review aims to highlight the recent advances in the design and synthesis of polyzwitterions including direct polymerization of zwitterionic monomers and deionization of polymers. Furthermore, the formation of polyzwitterion based soft materials such as nanoparticles by self-assembly, hydrogels, coatings and polyzwitterion brushes, as well as the influence of the microstructure on their properties and applications are discussed.

Effective hydrolysis of lignocelluloses for producing reducing sugar is impeded by the covalent binding of hemicellulose and cellulose through lignin, which could be eliminated by laccases. This study identified a novel thermostable laccase from Bacillus safensis TCCC 111022 and created an iterative mutant E231D/Y441H, exhibiting 1.59-fold greater specific activity and a 183 % greater half-life at 80°C than the wild-type enzyme.
