A high-stability konjac glucomannan-functionalized gold nanoparticles (KGM-Au NPs) were successfully synthesized via a one-step hydrothermal method. The Au (III) ion was employed as Lewis acid which could induce exposure to the highly reducing aldehyde or ketone groups of KGM to prepare Au NPs. The KGM-Au NPs exhibited excellent stability with strong acids and excess ion concentrations, owing to the oxidation products of aldehyde or ketone groups in KGM.
