To address the poor hydrolytic stability of CD-MOF in food applications, CD-MOF loaded with thymol (TCDM) was prepared and filled into a pectin (PEC)/sodium alginate (SA) substrate with the aid of zein to obtain a thymol-CD-MOF/zein-PEC-SA (TCDM/ZPS) polymer film. Characterization revealed that zein-PEC/SA (ZPS) protected TCDM by forming amphiphilic microspheres. TCDM was able to exist stably in the hydrophilic polysaccharide substrate and achieve a long-term slow release over 336 h.

The results showed that as the proportion of gluten increased, the degree of order and crystalline conformation was lost, manifested by an increase in the gel network's porosity and protein aggregation. The dilution effect of gluten on starch and the water competition significantly reduced the viscosity and elasticity of the system, and the ratio of glu75-gli25 had the most significant impact on the viscoelasticity.

Jiang-flavor Baijiu (JFB) is one of the most complex and representative types of traditional Chinese liquor, known for its unique flavor, which is popular among Chinese consumers. Previous studies primarily focused on detecting and identifying volatile compounds but lacked comprehensive descriptions and precise differentiation of their sensory qualities. To explore the sensory characteristics of JFB, this study collected widely recognized sensory descriptors from literature, standards, free descriptive questionnaires, and Pivot Profile experiments, which were then textually analyzed and merged to yield 88 sensory descriptors.

This study provides a simple and effective strategy for developing gels suitable for different adsorption scenarios by adding different ratios and ion types of polysaccharides. The addition of locust bean gum (LBG, neutral charge) and xanthan gum (XG, -/negative charge) increased the viscosity of wheat gels, with XG increasing more significantly at the same addition.

Results indicated that the addition of SG-CF or HB-CF reduced the moisture and protein content of the mixed flour, and increased the dietary fiber content and free water proportion. Compared with SG-CF, HB-CF was more helpful enhancing the thermal stability and anti-aging properties of the mixed flour.

The results demonstrated that the esterification process enhanced the viscosity of the starch gel system. Furthermore, the optimal esterification level (3 %) facilitated the formation of a dense composite gel network, as observed through microstructure observation.

The main purpose of this paper is to investigate the effects of RPAP on the pasting, rheological, thermal, structural, and digestive properties of CS. The results show that the addition of RPAP could increase the peak viscosity and final viscosity of CS gel, and RPAP could increase the apparent viscosity, storage modulus, loss modulus, hardness, and strength of CS gel, implying that RPAP can effectively improve the pasting and viscoelasticity properties of CS.

Methods: A total of 149 patients with unilateral upper limb fractures who underwent open reduction and internal fixation surgery under brachial plexus block anesthesia from November 2021 to August 2022 were selected as the subjects for the study and randomly divided into the esketamine group (RNK group) and the ropivacaine group (R group). The incidence of rebound pain at 48 h postoperatively, intraoperative mean arterial pressure (MAP) and heart rate (HR), the onset time and duration of blockade, the Numeric Rating Scale (NRS) scores for pain at rest and with activity during the perioperative period, the dosage, numbers of compressions, and effective compressions of postoperative patient-controlled analgesia with sufentanil, and occurrence of adverse reactions were assessed and compared between the two groups.
To improve the defective processing of barley fermented dough, this study constructed barley model dough using reconstituted hordein/glutelin ratios (75:25, 50:50, and 25:75) and elucidated its regulatory roles and potential mechanisms. SEM and CLSM results showed that increasing the hordein ratio improved the continuity and completion of the reconstituted gluten network compared to Control, thus allowing the gluten to stretch and elongate during fermentation. Also, LF-NMR revealed that the water distribution of the reconstituted system tended to shift from a free to a bound state, contributing to water retention during the dough hydration phase.

This work aimed to exploit the effects of pomegranate peel (PP) addition (10 %) and homogenization process (0-12,000 rpm) on the film-forming behavior and interactions of starch film to improve its microstructures and properties. Microrheology results showed that the viscosity of the film suspension was reduced by homogenization, and the amylopectin aggregation was restricted by PP particles under film formation. This helped improve the accessibility of starch and PP, increasing the hydrogen bond energy in the composites from 18.
