Article Synopsis
  • The Food Safety and Inspection Service (FSIS) initiated the PR-HACCP rule in 1996 to reduce pathogen contamination in meat, poultry, and egg products, fully implementing it between 1998 and 2000.
  • A study analyzed over 650,000 samples from FSIS between 2000 and 2018 and compared them with about 100,000 retail samples from the FDA between 2002 and 2017.
  • The findings indicate a general decline in Salmonella in meat and poultry, though changes were inconsistent over time and across different products, prompting suggestions for potential causal factors based on historical policy decisions.
