The aim of this study was to explore the effects of environmental factors (salt ions and pH) on the thermal gelation process of deamidated soy protein isolate (DSPI). The results indicated that with increasing salt ion concentration, DSPI assembled into larger aggregates, which were more prone to aggregation in thermal reactions, ultimately forming a gel network with higher viscoelasticity. The strength enhancement of ion-induced gel networks followed the order from highest to lowest: Ca > Mg > Na.

Background: Pheochromocytomas (PCCs) are rare neuroendocrine catecholamine (CA)-secreting tumours that originate from chromaffin tissue and can produce and store CAs. Unexpected PCCs pose a serious threat to the perioperative safety of patients and a considerable challenge to anaesthesiologists because of the risks of fatal hypertensive crises and other stresses.

Objectives: To develop robust variants of L-threonine aldolases (L-TAs), potent catalysts for synthesizing asymmetric β-hydroxy-α-amino acids, it is necessary to identify critical residues beyond the known active site residues.

Results: Through virtual screening, a neglected residue Asn305, was identified as critical for catalytic efficiency. Subsequent site-saturation mutagenesis led to a potent variant N305R which exhibited excellent conversions of 88% (87%) and 80% (94%) for the synthesis of L-threo-phenylserine and L-threo-4-fluorophenylserine respectively.

This study analyzed skin wipe samples from the forehead, palm, forearm, and lower leg of 120 volunteers across different age groups-preschoolers, thresholders, middle-aged, and elderly-with each group comprising 30 individuals with a balanced sex ratio from a city in South China. The research aimed to assess the occurrence, concentration, and associated health risks of polybrominated diphenyl ethers (PBDEs) and polychlorinated biphenyls (PCBs) adsorbed onto human skin from environmental sources. We identified 13 PBDE congeners and 10 PCB congeners across all samples, with average detection frequencies of 48% for PBDEs and 16% for PCBs, with concentrations ranging from non-detectable (ND) to 4200 and ND to 2300 ng/m, respectively.
