The Strait of Sicily (SoS) is a region of key ecological importance because of its peculiar oceanographic conditions, high biodiversity, and critical role as a transition area between the western and eastern basins of the Mediterranean Sea. The SoS was designated as an Ecologically or Biologically Significant Area (EBSA) by the Contracting Parties of the Convention on Biological Diversity in 2014 [1] and acknowledged as an Important Shark and Ray Area (ISRA) in 2023 [2]. Ongoing research and conservation efforts are essential to protect this vital marine corridor from increasing anthropogenic pressures.

The aim of this study was to develop health-oriented fermented salamis by replacing synthetic preservative (E 252) with dried Sumac (Rhus coriaria) fruit powder (DSFP). The salamis were produced at an industrial scale using meat from the "Suino Nero dei Nebrodi" breed, without adding starter cultures. The experimental design included four different salami productions: CTR, control production without nitrate salt and DSFP; CMC, commercial control production with nitrate salt but without DSFP; EXP1, experimental production without nitrate salt but with DSFP; and EXP2, experimental production with both nitrate salt and DSFP.

Recruitment success depends on external forcing mechanisms such as ocean currents that affect the transport of eggs and larvae to favorable habitats. In this study, we investigated the role of larval transport in the recruitment of Mullus barbatus in the Central Mediterranean Sea by modeling the recruits' abundance as a function of both spawning stock size and dispersal rates of the species' early life stages. Our analysis involved twenty years of data on recruits and spawners abundance obtained from scientific trawl surveys, and data on larval dispersal rates derived from a combination of actualized published sources and original data.

In this study, Caciocavallo Podolico Lucano (CPL) cheese was deeply characterized for its bacterial community, chemical composition and sensory aspects. The entire cheese making process (from milk collection to ripened cheese) was performed by strictly applying the traditional protocol for CPL production in four dairy factories (A-D) representative of the production area.
