These were studied to evaluate the influence of the oil structuring system on the lipid hydrolysis and bioaccessibility of three healthy fatty acids (FA) (palmitic, oleic, and α-linolenic acids) and of curcumin, compared to the oil mixture (bulk oil, BO). The oil structuring system influenced the firmness and texture, and the presence of curcumin significantly altered the color parameters.

This study aims to evaluate the effect of silicon-enriched-meat consumption on lipidaemia, lipoprotein profile and metabolism, plasma arylesterase, and TBARS and their relationships with glycaemia, insulinaemia, and insulin-signaling markers in late-stage-T2DM rats fed a high-saturated-fat-high-cholesterol (HSFHC) diet. Thus, we performed an in vitro study in human aortic endothelial cells (HAEC) to investigate mechanisms underlying the effects observed in vivo.
Methods: This sub-study was conducted within the framework of the RESET study, a 12-week randomised controlled crossover trial with FA-modified and control dairy diets.
Pork lard gelled emulsions stabilized with two proteins [soy protein concentrate (SPC) or a pork rind protein extract (PRP)], both with and without added silicon (Si) from diatomaceous earth powder, were gelled by microbial transglutaminase and к-carrageenan. These gelled emulsions (GEs), intended as fat replacers, were evaluated in different aspects, including microstructure and technological properties during chilling storage. In addition, in vitro gastrointestinal digestion (GID) with an analysis of lipolysis and lipid digestibility was also evaluated.

On one side, the obstacle eases the destruction of weak arches, a phenomenon that can be explained by the pressure screening that it causes in the outlet proximities. But on the other side, we discover that the obstacle presence leads to the development of a few very strong arches.

Here, we experimentally demonstrate that pedestrians roaming within an enclosure also form vortex-like patterns which, intriguingly, only rotate counterclockwise. By implementing simple numerical simulations, we evidence that the development of swirls in many-particle systems can be described as a phase transition in which both the density of agents and their dissipative interactions with the boundaries play a determinant role.

In contrast with all previously studied pedestrian systems, we unveil a unique regime in which speed increases with density that can be understood in terms of a time-dependent desired velocity of the runners. Also, we discover the existence of an inaccessible region in the speed-density state diagram that is explained by falls of runners.

Here, we experimentally demonstrate that, for vibrated granular media, such a transition genuinely exists, and we characterize it as a function of the outlet size and vibration intensity. We confirm the suitability of the "flowing parameter" as the order parameter, and we find out that the rescaled maximum acceleration of the system should be replaced as the control parameter by a dimensionless velocity that can be seen as the square root of the ratio between kinetic and potential energy.

The systems, intended as functional food ingredients, were studied in various different respects, including rheological behaviour, in vitro gastrointestinal digestion with determination of the release of non-extractable proanthocyanidins (NEPA) from T, antioxidant activity and lipolysis. EP significantly affects the rheological behaviour of both Es and GEs.
